I have a good recipe!





KRISPY's CARROT CAKE:


2 cups sugar


1 1/2 cups Crisco oil


4 eggs


2 1/4 cups flour


1 teaspoon salt


2 teaspoons baking soda


2 teaspoons cinnamon


3 cups grated raw carrots


1 1/2 cups chopped walnuts


Mix in large bowl, sugar, oil and eggs; beat well. In separate bowl, sift flour, salt, baking soda and cinnamon. Blend dry ingredients into egg mixture. Stir in carrots and nuts. Pour into prepared pans. Bake at 300 degrees for about 60 minutes or until toothpick inserted in center comes out clean. Cool well before icing.





CREAM CHEESE FROSTING:


1 (8 ounces) package cream cheese, softened


1/2 cup margarine or butter, softened


1 teaspoon vanilla extract


3 cups sifted powdered sugar


1 Tablespoon milk

Unsalted butter, for the pan


12 ounces, approximately 2 1/2 cups, all-purpose flour, plus extra for pan


12 ounces grated carrots, medium grate, approximately 6 medium


1 teaspoon baking powder


1 teaspoon baking soda


1/4 teaspoon ground allspice


1/4 teaspoon ground cinnamon


1/4 teaspoon freshly ground nutmeg


1/2 teaspoon salt


10 ounces sugar, approximately 1 1/3 cups


2 ounces dark brown sugar, approximately 1/4 cup firmly packed


3 large eggs


6 ounces plain yogurt


6 ounces vegetable oil


Cream Cheese Frosting, recipe follows





Preheat oven to 350 degrees F.


Butter and flour a 9-inch round and 3-inch deep cake pan. Line the bottom with parchment paper. Set aside.





Put the carrots into a large mixing bowl and set aside.





Put the flour, baking powder, baking soda, spices, and salt in the bowl of a food processor and process for 5 seconds. Add this mixture to the carrots and toss until they are well-coated with the flour.





In the bowl of the food processor combine the sugar, brown sugar, eggs, and yogurt.


With the processor still running drizzle in the vegetable oil. Pour this mixture into the carrot mixture and stir until just combined. Pour into the prepared cake pan and bake on the middle rack of the oven for 45 minutes. Reduce the heat to 325 degrees F and bake for another 20 minutes or until the cake reaches 205 to 210 degrees F in the center.





Remove the pan from the oven and allow cake to cool 15 minutes in the pan. After 15 minutes, turn the cake out onto a rack and allow cake to cool completely. Frost with cream cheese frosting after cake has cooled completely.








Cream Cheese Frosting:


8 ounces cream cheese


2 ounces unsalted butter, room temperature


1 teaspoon vanilla extract


9 ounces powdered sugar, sifted, approximately 2 cups


In the bowl of a stand mixer with paddle attachment, combine the cream cheese and butter on medium just until blended. Add the vanilla and beat until combined. With the speed on low, add the powdered sugar in 4 batches and beat until smooth between each addition.





Place the frosting in the refrigerator for 5 to 10 minutes before using
If you've got enough on your plate (pardon the pun) and can't be bothered with the grating, mixing, cutting.... try the Jane Asher packet mix. It's really rather good and exceptionally easy, but be warned that it doesn't contain the icing.





To make the icing, warm some butter slightly (don't let it melt) so that you can stir it, and a teaspoon of vanilla extract and then beat in as much icing sugar as you can. this gives you lovely butter icing and in my humble opinion, works better than the yoghurty toppings that you sometimes get.

Carrot-Walnut Cake (lighter recipe)

Cake


1 1/2cups granulated sugar


1/2cup vegetable oil


1/2cup unsweetened applesauce


2teaspoons vanilla


1egg


4egg whites


2cups Gold Medal庐 all-purpose flour


1 3/4teaspoons ground cinnamon


1teaspoon baking soda


1/2teaspoon salt


1/4teaspoon ground nutmeg


5medium carrots, shredded (3 cups)


Cream Cheese Frosting (lighter recipe)


1package (8 oz) reduced-fat cream cheese (Neufch芒tel), softened


1tablespoon fat-free (skim) milk


1teaspoon vanilla


4cups powdered sugar





1.Heat oven to 350掳F. Grease and flour bottom and sides of 13x9-inch pan. In large bowl, mix sugar, oil, applesauce, vanilla, egg and egg whites until blended; beat with spoon 1 minute. Stir in remaining cake ingredients except carrots; beat with spoon 1 minute. Stir in carrots. Pour into pan.


2.Bake 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack.


3.In medium bowl, beat cream cheese, milk and 1 teaspoon vanilla with electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, until smooth and spreadable. Spread frosting over cake.

Carrot Scones





Prep Time:15 min


Start to Finish:50 min


Makes:12 wedges





2packages (3 oz each) cream cheese, softened


1box Betty Crocker庐 SuperMoist庐 carrot cake mix


1/3cup half-and-half


1egg


1/2cup walnuts


1/2cup raisins


1/2cup Betty Crocker庐 Rich %26amp; Creamy cream cheese frosting





1.Heat oven to 400掳F (375掳F for dark or nonstick cookie sheet). Grease cookie sheet, or spray with baking spray with flour.


2.In large bowl, cut cream cheese into dry cake mix, using fork, until mixture looks like fine crumbs. Stir in half-and-half, egg, walnuts and raisins until soft dough forms. Knead 6 times on well-floured surface.


3.Divide dough in half; shape each half into a ball. Press dough into 3/4-inch-thick circle (about 6 1/2 inches in diameter). Cut each into 6 wedges with lightly floured knife. Place 1 inch apart on cookie sheet.


4.Bake 17 to 23 minutes or until edges just begin to brown. Remove from cookie sheet. Cool 10 minutes. In microwavable bowl, microwave frosting uncovered on Medium (50%) 15 seconds. Drizzle frosting over scones. Serve warm. Store covered at room temperature.


High Altitude (3500-6500 ft): Bake 14 to 17 minutes.

Carrot Raisin Bars

Makes:48 bars





1box Betty Crocker庐 SuperMoist庐 carrot cake mix


1/2cup vegetable oil


1/4cup water


2eggs


3/4cup raisins


1/2cup chopped nuts


1container Betty Crocker庐 Rich %26amp; Creamy cream cheese frosting





1.Heat oven to 350掳F (325掳F for dark or nonstick pan). Grease and flour, or spray with baking spray with flour, bottom and sides of 15x10x1-inch pan.


2.In large bowl, mix cake mix, oil, water and eggs with spoon. Stir in raisins and nuts. Spread evenly in pan.


3.Bake 18 to 24 minutes (25 to 29 minutes for dark or nonstick pan) or until bars spring back when touched lightly in center. Cool completely, about 1 hour. Spread with frosting. For bars, cut into 8 rows by 6 rows. Store loosely covered at room temperature.


High Altitude (3500-6500 ft): Bake 22 to 27 minutes.
