For Christmastime I really like making cathedral cookies. They are really tasty plus they just look pretty on a tray. Here is the recipe:
Cathedral Cookies
1 cup semisweet chocolate chips
2 tablespoons butter (no substitutes)
1 egg, beaten
3 cups pastel miniature marshmallows
1/2 cup chopped pecans or walnuts
1 cup flaked coconut
In a heavy saucepan, melt chocolate chips and butter over low heat, stirring occasionally. Stir a small amount into the egg, then return all to pan. Cook and stir over low heat for 2 minutes. Pour into a bowl; let cool for 15 minutes. Gently stir in marshmallows and nuts. Chill for 30 minutes. Turn onto a sheet of waxed paper. Form into a roll about 1-1/2 in. diameter. Gently roll onto another sheet of waxed paper, cover the outside of the roll with the coconut. Wrap roll tightly, twisting ends to seal. Freeze for 4 hours or overnight. Remove waxed paper. Cut into 1/4-in. slices. Store in an airtight container in the refrigerator.
My favorite cake is called Buttercup cake. I make it year round, it is that good! The frosting make it so good:) Sometimes I just buy a white cake mix and use that with the frosting instead if I am in a hurry but I will give you the full version. Here is that recipe:
Buttercup Cake
2/3 c butter or margarine, softened
1-3/4 c sugar
2 eggs
3/4 tsp. vanilla
1/4 tsp. almond flavoring
1/2 tsp lemon flavoring
3 c sifted cake flour
1-1/4 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1-1/4 c buttermilk
Cream together until fluffy (5 min. on high) butter/margarine, sugar, eggs, vanilla, almond flavoring, and lemon flavoring. Sift together flour, baking powder, baking soda, and salt. Mix dry ingredients into creamed mixture alternately with buttermilk. Pour into greased pans. Bake 350. For layer pans, bake 35-40 minutes. For 9x13'; pan, bake 45-50 minutes.
Frosting
1 c sour cream
2 c brown sugar
1 c white sugar
1 T. butter
1 tsp. vanilla
Boil sour cream and sugars until soft ball stage (234-240 degrees). Remove from heat. Add butter and vanilla. Cool. Beat until spreading consistency. Will spread a 2-layer cake.What are your favorite Xmas cookie/cake recipes??
