Wilton's cake decorating supply company has powdered egg white merinque mixture this may be what you are looking for if you are cooking on a small scale. Other wise I'd be Googling bakery supply houses. So try Wilton's first I can't think of a reason that re-hydrated egg whites wouldn't whip up. But I have never tried.I need to find a retail source for dehydrated/powdered egg whites that are ';whippable'; for use in cake recipes
