Ingredients:
3 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 cup shortening
2 eggs
1 teaspoon vanilla extract
Preparation:
Sift dry ingredients together into a mixing bowl; cut in shortening. Add eggs and vanilla, and mix well.
Drop batter by rounded teaspoonfuls onto greased baking sheets. Bake at 425掳 until edges begin to brown.
Recipe makes about 4 dozen tea cakes.

1 1/2 cups chai tea latte concentrate, such as Oregon Chai
1/3 cup nut oil, such as walnut oil
3 eggs, large or extra large
8 slices crystallized ginger, finely diced (about 1/3 cup; optional)
1 cup prepared whipped cream cheese icing
No-stick flour and oil

Directions:
Heat the oven to 350F. Spray the interior of a nonstick Bundt pan with baking spray.
Cobine the cake mix, 1 1/3 cups chai concentrate, oil, and eggs in a large bowl and beat until smooth and fluffy, about 2 minutes. Stir in the candied ginger, if desired. Spoon into the bundt pan and bake until a tester inserted into the crest of the cake comes out clean, about 40 minutes. Cool in the pan for at least 20 minutes. Invert the cake onta serving plate and cool to room temperature.
Mix the icing with the remaining chai concentrate and drizzle over the top of the cake, allowing the glaze to run down the sides in rivulets. Slice and serve.
Chai is black tea infused with spice cake spices - cinnamon, ginger, cardamom, clove, allspice, and mace. So it seemed a logical experiment to introduce it into a spice cake recipe. The cake didn't get spicier. Instead, it became more complex in flavor, subtler and wonderfully floral.
The first recipe is a green tea cake, but the tea is only used in the frosting. I have tried this recipe and it's very yummy and different. The second one is a green tea pound cake, which comes out marbled, and is more basic.
GREEN TEA CAKE
INGREDIENTS
FOR CAKE:
1 cup all-purpose flour
1 cup cake flour
1 teaspoon baking soda
1 teaspoon salt
4 teaspoons powdered green tea
1 1/4 cups white sugar
1 cup vegetable oil
3 eggs
1 cup plain yogurt
1 1/2 teaspoons vanilla extract
FOR FROSTING:
1 1/4 cups confectioners' sugar
2 teaspoons powdered green tea
2 tablespoons butter, softened
1 (3 ounce) package cream cheese, softened
1/2 teaspoon vanilla extract
1 1/2 teaspoons milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 9 inch round pans. Sift together the all-purpose flour, cake flour, baking soda, salt, and green tea powder; set aside.
In a large bowl, beat together sugar, oil, and eggs until smooth. Stir in 1 1/2 teaspoons vanilla. Beat in the flour mixture alternately with the yogurt, mixing just until incorporated. Pour batter into prepared pans.
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool on wire rack for 30 minutes before turning out of the pans.
To make Green Tea Frosting: Sift together confectioners' sugar and green tea powder. In a medium bowl, combine tea mixture with butter, cream cheese, vanilla and milk. Beat with an electric mixer until smooth.
To assemble the cakes: when the cakes are completely cooled, put one layer on a flat serving plate. Spread a thin layer of frosting over it. Place the other layer of cake on top, and spread frosting to cover the top and sides of cake. Dust with green tea powder if desired. Serve cold or at room temperature.
Green Tea Pound Cake
INGREDIENTS:
2 large eggs
1 cup flour
2/3 cup sugar
1/2 cup butter
1 tbsp maccha (green tea powder)
1/2 tsp baking powder
PREPARATION:
Cream butter in a bowl. Add sugar in the butter and mix well. Gradually add beaten eggs and stir well. Sift flour, baking powder, and green tea powder together and add the flour to the egg mixture. Pour the batter into a buttered loaf pan. Bake in preheated 340 degrees F oven for about 30-40 minutes.
