What good (reasonably healthy) cake recipes do you know?

Im doing GCSE coursework on coronary heart disease and for my practical exam i have to make some dishes that would be suitable. Does anyone know any good dessert/cake recipes that don't take too long and that aren't too hard???

Blueberry Muffins


Ingredients:








9oz self-raising flour


1.5tsp baking powder


2oz margarine


3oz caster sugar


1 punnet blueberries, washed


Juice of half a lemon


2 large eggs


235ml milk





To make:








Sieve flour and baking powder twice.








Add the margarine and rub gently until it resembles breadcrumbs; stir in the sugar and berries.








Whisk together the eggs, milk and lemon juice.








Add this to the dry mixture and stir briefly (enough to combine but leaving it lumpy).








Dollop the mixture into 12 muffin cases and bake at 180 deg C for 20-25 minutes.








Eat warm with cappuccino!








Banana Muffin Cake


Ingredients:








9oz self-raising flour


1.5tsp baking powder


2oz margarine


3oz caster sugar


2 bananas, mashed


Juice of half a lemon


2 eggs, beaten


Up to 200ml milk





Topping Ingredients:








3oz self-raising flour


1oz butter


3oz Demerara sugar


2oz pecans, chopped quite finely





To make:








Sieve flour and baking powder twice.








Add the margarine and rub gently until it resembles breadcrumbs; stir in the sugar and mashed banana.








Whisk together the eggs and lemon juice.








Add this to the dry mixture and stir briefly (enough to combine but leaving it lumpy).








Add enough milk to loosen the batter – it should drop slowly from a spoon.








Now, make the topping. Rub the butter into the flour, then stir in the sugar and nuts.








Sprinkle it evenly over the uncooked cake and bake for 50-60 minutes at 180 deg C.








Check the cake with a skewer – it’s ready when the skewer comes out clean.








Fat-Free Sponge


Sounds like an impossible dream, but this sponge really is fat free. Spread with jam and topped with fresh fruit and a sifting of icing sugar, it’s a wonderful treat that you can enjoy even when you’re on a diet! The eggs keep the cake light and fluffy: make sure you whisk them thoroughly, or whisk over a pan of hot water for extra air. For a change, you can swap some of the flour for cocoa, and fill with cherry jam and grated dark chocolate.





Ingredients:








4 eggs, beaten


4oz caster sugar


4oz plain flour (or 3oz flour and 1oz good cocoa)


Pinch salt





To make:








Spray an 8” round tin with light cooking oil to make the cake easy to turn out.








Preheat the oven to 180 degrees C.








Now whisk the eggs and sugar until the mixture is pale, fluffy and doubled in volume.








Sift in the flour and salt from a good height, and fold using as few strokes as possible.








Tip the mixture gently into your greased cake tin and bake for 30-35 minutes.

Blueberry Coffee Cake (Starbucks Copycat)





Ingredients (for about 6 servings)





For the Cake:





1 egg





1 cup milk





1/4 cup unsalted butter, melted





2 cups all-purpose flour





1/2 cup granulated sugar





2 1/2 tsps baking powder





1/2 tsp salt





1/2 tsp ground mace





1 cup fresh blueberries





For the Topping:





2 tbsps unsalted butter





1/3 tsp ground cinnamon





1/4 cup granulated sugar





1/2 cup all-purpose flour





Preparation





- To make the topping, combine cinnamon, sugar and flour in a small bowl.





- Add butter and beat with a pastry blender until the mixture is crumbly. Set aside.





- To make the cake, beat together the egg, milk and butter in a large bowl.





- Sift flour, sugar, baking powder, salt and mace into a bowl.





- Add the egg mixture and beat together until well blended.





- Stir in blueberries.





- Lightly butter a 9-inch-diameter cake pan.





- Evenly spread the cake batter in the pan and sprinkle with the topping.





- Bake in a preheated 350° F oven for about 40 - 45 minutes.






Honey Banana Health Cake Recipe


125g (4 oz) butter


2/3 cup honey


1 egg


2 cups wholemeal self-raising flour


2 teaspoons cinnamon


2 ripe medium-size bananas


1/4 cup milk





Beat butter and honey until light and creamy, add egg, beat well, add peeled, mashed bananas, beat well. Add sifted flour and cinnamon (return husks from sifter to bowl) and milk, beat until ingredients are well combined. Spread mixture into well-greased 28cm x 18cm (11x7';) tin, bake in moderate oven 45 mins or until cooked when tested. Turn onto wire rack to cool.
Eggs are allegedly high in cholesterol so egg-free recipes would be good? And low fat is always good so a fat-free recipe would also be good. I have a recipe (unfortunately, not with me) for a boiled fruit cake that doesn't have eggs in it. And a proper swiss roll recipe doesn't have fat in it. You could get these recipes on the net, I'm sure. I'd go for a fruit cake because of the ';goodness'; of the fruit and natural sweetness. Good luck with your GSCE!

2 eggs


175g unrefined sugar


150ml sunflower oil


200g wholemeal flour


200g carrots grated


2tsp mixed spice





beat eggs, sugar and oil fold in other ingredients pour in tin and bake about 45 mins till a skewer comes out clean. if u want to ice it use some low fat cream cheese, stir in some icing sugar and pinch of cinamon or orange juice.
Angel Food cake is the most heart-healthy cake, since you don't use egg yolks. Make one from a mix (or buy one); cut in layers. Use Cool Whip and sliced strawberries between the layers, and on top
well ik how to make a sauce cake but its not that healthy its really really chocolaty do you want that? email me and if you do i will tell you it! it is really really really good!
