1/2 cup fine yellow cornmeal

1/2 cup cake flour

1 teaspoon baking powder

1 stick (4 ounces) unsalted butter, softened

1/4 cup almond paste, cut into half-inch pieces

1 1/4 cups confectioners' sugar, plus more for dusting

1/2 teaspoon pure vanilla extract

2 eggs

4 egg yolks

1/4 cup sour cream

Preheat oven to 350 degrees F.

Grease an 8-inch round cake pan with vegetable spray. An alternative is to butter and flour the cake pan.

In a medium bowl, whisk together the cornmeal, cake flour and baking powder and set aside.

Using a stand mixer with a paddle attachment, beat the butter and almond paste on high speed until smooth, about 5 minutes. Reduce speed to low and slowly add confectioners' sugar. Mix until thoroughly combined and light and fluffy. Raise speed to high and add the vanilla extract, whole eggs and egg yolks, 1 at a time. Mix until well combined. Reduce speed to medium and add the sour cream and dry ingredients and mix until just incorporated.

Pour the batter into the prepared cake pan and smooth the surface with a spatula. Bake in the lower third of the oven for 35 minutes, or until the cake is golden and pulls away from the sides of the pan. Transfer pan to a wire rack and let cool. Remove from pan and dust with confectioners' sugar.

1/2 cup cocoa powder

1 teaspoon baking powder

1 teaspoon salt

1 (15 ounce) can crushed pineapple, drained

Mix together cake mix, canned oranges with juice, eggs, and oil. Pour batter into three greased and floured 8 inch round pans. Layers will be thin. (You can use 2 layers if you desire.)

Mix together whipped topping, drained pineapple, and instant pudding mix. Fill and frost the cooled cake.

Refrigerate until ready to eat.
This is my all-time favorite and a favorite at the office. I bake birthday cakes for our team, and everyone always requests this one. I got it from Nigella Lawson's book called ';Feast';.

Flourless Orange Chocolate Cake

2 small thin-skinned oranges

6 eggs

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup sugar

2 oz cocoa powder

1 tub chocolate frosting (this is where I cheat)

Put the whole orange or oranges in a pan with some cold water, bring to the boil and cook for 2 hours or until soft.

Drain, and when cool, cut the oranges in half and remove seeds. Then pulp everything - pith, peel and all - in a food processor.

Preheat oven to 350 F. Spray a the cake tin you want to use with non-stick cooking spray.

Add the eggs, baking powder, baking soda, sugar and cocoa to the orange in the food processor. Run the motor until you have a cohesive cake mixture, but slightly knobbly with the flecks of pur茅ed orange.

Pour and scrape into the cake tin and bake for an hour, by which time a cake tester (toothpick, of course) should come out pretty well clean. In my oven, that's about 25-30 minutes.

Leave the cake to get cool in the tin, on a cooling rack. When the cake is cold you can take it out of the tin. Decorate with strips of orange peel or coarsely grated zest if you so wish, but it is darkly beautiful in its plain, unadorned state.
I have tried this and it is tasty, but I haven't tried the chocolate version. I also left out the coconut.
