Double-Chocolate Cappuccino Cake

Makes:12 servings
1 box Betty Crocker庐 SuperMoist庐 chocolate fudge cake mix
Water, vegetable oil and eggs called for on cake mix box
1 tablespoon instant espresso coffee (dry)
1/2 teaspoon ground cinnamon
4 oz semisweet baking chocolate, chopped
1 container Betty Crocker庐 Rich %26amp; Creamy dark chocolate frosting
2 teaspoons instant espresso coffee (dry)
1. Heat oven to 350掳F (325掳F for dark or nonstick pans). Make and cool cake as directed on box for two 8-inch or 9-inch round pans--except add 1 tablespoon espresso and the cinnamon with the eggs and stir in the chocolate just before pouring into pans.
2. To make glaze, remove lid and foil cover of frosting. Microwave on High 20 to 30 seconds or until slightly melted. Stir in 2 teaspoons coffee until blended.
3. Place 1 cake layer, rounded side down, on serving plate. Carefully spread almost half the glaze to edge of layer, allowing some to drip down side. Top with second layer, rounded side up. Carefully spread remaining glaze to edge of top layer, allowing some to drip down side. Store loosely covered.

Lemon Glaze Coffee Mug Cake
INGREDIENTS:
1 (18.5 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
2-2/3 cups confectioners' sugar
1/4 cup powdered lemonade mix
PREPARATION:
Each coffee mug should hold 1-1/2 cups water.
Place dry cake mix and dry pudding mix into a large bowl and blend well with a whisk. This will be about 4 to 4 1/2 cups of dry mix and will make 8 coffee cup cake mixes.
Divide mix into 8 small plastic bags (about 1/2 cup each). Place mix into a corner of each bag and tie it there with a twist tie.
Make glaze mix: in a medium bowl, combine confectioners sugar with powdered flavoring mix. Divide into 8 small plastic bags and close bag with a twist tie. Attach each glaze mix to the cake mix bags with a twist tie. Place one of each bag into each cup.
Attach the following instructions to each cup:
Generously spray inside of cup with cooking spray. Empty contents of cake mix packet in cup. Add 1 egg, 1 tablespoon of oil, 1 tablespoon water to dry mix. Mix 15 seconds, carefully mixing in all dry mix. Microwave on full power for 2 minutes. While cake is cooking, place ingredients from Glaze mix into a very small container and add 1 1/2 teaspoon water. Mix well. When cake is done, pour glaze over cake in cup. Enjoy while warm.

Upside Down Layer Cake Ingredients
1 pk Yellow cake mix; 18 1/2 oz. 1 Carton (Small) Cool Whip
1 cn Cherry pie filling
Instructions for Upside Down Layer Cake
Line bottom of 2 round glass layer cake dishes with wax paper. Set aside. Prepare cake mix according to package directions. Set aside. Divide pie filling between cake dishes, spreading evenly over the bottom. Divide batter between cake dishes, over top of pie filling. Cover with wax paper. Microwave one layer at a time. Place on inverted saucer in microwave oven. Microwave at medium high (70%) 5 minutes. Remove wax paper. Microwave at high (100%) until top springs back at touch, 2 to 3 minutes. Let stand 5 minutes. Invert onto serving plate. Carefully remove wax paper. Repeat with remaining layer. Cool completely. Place second layer on first Frost sides with Cool Whip. Serve. NOTE: Use Spice Cake Mix and Apple Pie Filling, or Lemon Cake Mix and Berry Pie Filling.
