Coffee Angel Food Cake Recipe
For the cake:
1 cup cold water plus 1 tablespoon
3 tablespoons Mexican coffee flavored liqueur (recommended: Kahlua)
1 tablespoon instant coffee (recommended: Folgers)
1 (16-ounce) box angel food cake mix (recommended: Betty Crocker)
2 tablespoons cocoa powder (recommended: Hershey's)
For the icing:
3 tablespoons cocoa powder (recommended: Hershey's)
1 (1-pound) box powdered sugar, sifted (recommended: C and H)
1 tablespoon instant coffee (recommended: Folgers)
1/4 cup Mexican coffee flavored liqueur (recommended: Kahlua)
1/4 cup nonfat milk
For garnish:
Fresh raspberries
Move oven rack to lowest position. Preheat oven to 350 degrees F.
Combine the water, Mexican coffee flavored liqueur, and instant coffee in a medium mixing bowl. Stir until coffee crystals have dissolved.
Add cake mix and cocoa powder and using an electric hand mixer, beat on low speed for 30 seconds; then beat on medium speed for 1 minute. Pour into an ungreased 10 by 4-inch tube pan. Bake in preheated oven for 37 to 47 minutes or until top is a dark golden brown, cracked, and not sticky.
Remove from oven and immediately turn pan upside down onto a bottle until cooled completely. Run knife around edges of pan and remove cake from pan.
For the icing: Whisk together all ingredients in a medium mixing bowl until smooth. Pour icing evenly over the top of the cake letting it run down the sides of the cake. Let icing set for 1 hour. COFFEE CAKE
Cake
鈥?1 c margarine
鈥?3 tsp baking powder
鈥?1 1/2 c sugar
鈥?1 tsp salt
鈥?3 eggs
鈥?1 tsp vanilla
鈥?1 c milk
鈥?3 c flour
鈥?1/2 c melted margarine
FIlling
鈥?1 1/2 c brown sugar (may substitute 1 cup of chopped nuts for 1/2 cup brown sugar)
鈥?2 tsp cinnamon
Icing
鈥?Combine a small amount of powdered sugar with water to make a thin glaze.
鈥?Blend margarine and sugar. Add eggs. Alternate milk with dry ingredients.
鈥?Pour 1/2 of the batter in a greased 9x13 pan. Add 1/2 of filling and cover with remaining batter. Top with remaining filling.
鈥?Bake in oven for 10-15 minutes at 300 degrees. Pour 1/2 cup melted margarine on top and bake for 45-50 minutes longer.
鈥?Let it cool slightly and then drizzle with powdered sugar icing.
