Cake Recipes just need one victoria if poss or just a spouge?

I am a chef and the best sponge cake recipe I know is








3 large, or 4 medium eggs weighed


Whatever the eggs weigh weigh out everything else do that all ingredients weigh the same





Self Raising flour


Caster Sugar


Butter


Couple drops of milk and vanilla essence





blend the butter and sugar till completely mixed and almost white. Keep taking it in turns to mix a little egg and fold in a little flour.





Add the essence and milk then place mixture in a 9'; greased tin and place in the oven on a low to medium heat til cooked throughout.Cake Recipes just need one victoria if poss or just a spouge?
Victoria sponge


Makes 12 slices











Preparation time less than 30 mins





Cooking time 10 to 30 mins























Ingredients


110g/4oz butter or margarine


110g/4oz caster sugar


2 medium eggs


110g/4oz self raising flour











Method


1. Heat the oven to 180C/350F/Gas 4.


2. Line 2x18cm/7in cake tins with baking parchment


3. Use a hand mixer to cream the butter and the sugar together until pale.


4. Beat in the eggs.


5. Sift over the flour and fold in using a large metal spoon. The mixture should be of a dropping consistency - if it isn't, add a little milk.


6. Divide the mixture between the cake tins and gently spread out with a spatula.


7. Bake for 20-25 minutes until an inserted skewer comes out clean.


8. Allow to stand for 5 minutes before turning on to a wire rack to cool.


9. Sandwich the cakes together with jam, lemon curd or whipped cream and berries or just enjoy on its own.Cake Recipes just need one victoria if poss or just a spouge?

Place in microwave to re heat.


Take out after 5 minutes.....





Spouge Recipe.


To make a spouge, you have to make your spouse really mad at you..


Once he is crazy with vengeance, you have a spouge......


Or did you just mess up your spelling???????????????
Even I can make this recipe work!Victoria sponge.


Ingredients:6oz margarine,6oz self raising flour,pinch salt,6 oz caster sugar,3 eggs.Method:Cream margarine and sugar together then beat in the eggs.Sieve in flour and salt gradually fold into mixture.Put into 2 greased+floured 8 inch sandwich tins.Temp-180 Celsius Time-25/30 Min's. Tah-dah!

6oz self raising flour


6oz caster suagr


6oz margarine


3 eggs





Beat sugar and margarine together until pale.


Add the eggs and flour and mix 'til smooth.


Divide between 2 cake tins and bake at 180 degrees for 30 mins.


Once cake is cool sandwich together using raspberry jam and sprinkle the top with icing sugar.





I have made this cake soo many times and it's never failed me.

Sponge cake should be very light and airy and with a melt in the mouth texture. Everyone has their own favorite version of sponge cake but the basic rule is to beat the mixture well to get air into it, this is as much an art as a science so practice will improve your cake making ability. There are many things you can do with a sponge but a jam and cream filling seem to be the favorite perhaps with fresh strawberries in the summer.





Sponge cake recipe ingredients: Serves 4


100g butter


100g caster sugar


100g self raising flour


Vanilla essence


Pinch of salt


2 medium eggs





Sponge cake recipe cooking instructions:


1. Preheat oven to Gas mark 190°C.


2. Place the butter and sugar into a mixing bowl. Beat until smooth and creamy.





3. Beat the eggs in basin or cup and add to the mixture a little at the time, with the flour keeping the same smooth and creamy consistency.





4. Making sure the mixtures does not get too wet or dry as you go when you have used all the flour and the eggs.





5. Add the vanilla essence and a pinch of salt, mix for a few minutes.





6. Divide into two lined, or non-stick sponge tins, put into a moderately hot oven, middle shelf.





7. Put into the oven and bake for 20-25 minutes (it is important that the oven is well heated).





8. Put to cool on a rack to cool.





9.When cool put one upside down on a plate spread with jam, you can also put fresh cream in at this stage, put the other piece on the top and dust with icing sugar.
