3 tier cake recipes and cake pans?

how/where do i find 3 tier cake recipes and how big (deep) do cake pans come in cuz i'm trying to look for cake pans that are 3+ inches deep.3 tier cake recipes and cake pans?
Your 3'; deep cake pans won't cook the cake properly. When cooked through, the outside will be dry. This is why they layer cakes (not just for the oozing goodness of filling). Use Wilton pans and stack in layers. The Wilton pans have straight sides (which you will want) and come in a variety of sizes and shapes. The sizes you use should depend on the number of people you are feeding.





Are you stacking the layers directly on top of one another? In that case, you need to use doweling inserted into lower layers to support the upper ones. There are lots of small issues and only experts will be able to help you with your specific ones. Check the Yellow Pages for cake and candy supply stores. Most cake pans come 2 in deep, but you could split them with wiltons cake level and fill, that might give you the extra inch you are looking for. Good luck!

If you are making 3 tiered cakes, you need the individual layers to be around 1.5 inches, at the most. Otherwise, any subtle irregularities in the cake will cause it to fall over.
Hi. Good luck with your cake. In cake baking school a loooong time ago I learned this tip:





Take a nice clean, CLOTH diaper (or a similar thickness cloth).


Cut it into strips the same height as the cake pans.


Just prior to putting the layers in the oven to bake.


Soak the strips in room-temperature water and wring them out well.


Pin the strip(s) to tightly fit the outside of the cake pans.





Place the layers in the oven and bake as usual. The layers will come out the same height all the way across instead of having a ';hill'; in the middle. This is because the outside of each layer cooks at the same speed as the center of the cake ... because of the wet cloth. You can use the cloths over and over again. You may even be able to buy them nowadays!
